Apples come into their own in autumn. From sweet to tart to sour, these recipes celebrate a wide range of varieties. Listed alphabetically. (Click on photos for larger views.)
1. Apple Coffee Cake
I use Golden Delicious apples in this recipe, but if you have a favorite apple you prefer for baking, use it. The recipe is easy to make, and uses olive oil, making it a great choice for those who don't eat or want to avoid dairy products.
2. Apple Spice Cake
The spice cake can be made with oil or butter, and the results are delicious either way. The recipe calls for apples, pears, and quinces. If quinces are not available, use a Granny Smith or other sour/tart apple.
3. Apple Upside-Down Pie
The traditional tastes of apples and cinnamon come to life in this not-too-sweet one-crust apple pie that is cooked upside down. The recipe calls for red apples.
4. Apples in Syrup
Small apples are boiled in a light syrup with cinnamon and cloves to create a delicious and traditional sweet. In Greece, firikia apples are a favorite for this recipe because they are small, sweet, and have a wonderful aroma. To substitute, choose the smallest sweet apples you can find. Cooking will vary slightly for soft apples and crisp.
5. Baked Stuffed Apples
This is a favorite autumn dessert calling for red apples. Once the apple is cored, the walnut stuffing goes in. Cinnamon and cloves add traditional tastes.
6. Chilled Apple Soup
I first had this soup at a friend's house and asked for the recipe immediately! The soup has its origins in Central Europe and came to Greece by way of immigrants. It is best made with tart apples like Granny Smiths or crabapples, but I also like it with sweeter apples. Serve cold, with a spoonful of thick Greek yogurt on top if desired.
7. Skillet Pork & Apples
This deceptively simple recipe delivers big taste with the combination of pork, apples, wine, and a hint of cinnamon. Once cooking starts, it all moves very quickly so good preparation is key.
