Peel Tomatoes Before Using

Secrets of the Yiayia Sisterhood

If the tomato skin is tough, peel it before using in a cooked dish. Bring a pot of water to a boil, then turn off heat. Dip the tomato in hot water for a few seconds to soften the skin. Dip in ice water until able to handle, and use a sharp paring knife to peel.
