Substituting Canned Tomatoes for Fresh

Tomatoes are at their best in summer months, but they form the base of many Greek dishes enjoyed throughout the year. For using chopped tomatoes in casseroles, sauces, and other cooked dishes, the rule of thumb is:

  • For each 1 cup of fresh chopped tomatoes, use 2/3 cup of canned chopped tomatoes.
  • For each 1 cup of canned chopped tomatoes, use 1 1/2 cup of fresh.

When using canned tomatoes, I prefer using canned whole roma tomatoes and then chopping as needed.
