Greek Lamb Marinade with Coriander

A good marinade for lamb dishes such as souvlaki (kebabs on skewers). This marinade is for approximately 4-5 pounds of meat.

Ingredients:

  • 1 tablespoon of coriander seeds, crushed
  • 2 tablespoons of Greek oregano (dried)
  • 1 cup of extra virgin olive oil
  • 1/4 cup of red wine vinegar
  • 1 large onion, minced or grated
  • 2 bay leaves, crushed
  • sea salt
  • black peppercorns, cracked

Preparation:

Combine all ingredients. Pour marinade over meat and turn or toss to coat well. Cover and refrigerate for up to 24 hours. If time is a problem, marinate for at least two hours.

Cook meat as per recipe instructions.
