Yiaourti me Kari: Curry Mint Yogurt Sauce

From Nancy Gaifyllia, for About.com

In Greek: γιαούρτι με κάρι, pronounce yah-OOR-tee meh KAH-ree

This simple, easy, no-cook sauce is delicious with vegetables, lentils, seafood and meats. Try it as a dip with fresh veggies, and adjust the curry up or down to taste.

Prep Time: 2 minutes

Ingredients:

  • 2 cups Greek yogurt (see below)
  • 5 teaspoons of curry powder
  • 1 3/4 tablespoons of fresh mint, chopped
  • 1 1/4 tablespoons of honey

Preparation:

Whisk all ingredients together and chill until ready to use.

Yield: aproximately 2 cups

If you can't find thick Greek yogurt, strain commercial plain yogurt to make a thick and creamy subsitute (full fat, lowfat, nonfat).
