Low Fat Beet and Yogurt Salad

Beets and yogurt are a favorite combination, used even in some desserts; however this recipe, with fat-free yogurt, and beets marinated in vinegar, brings a fresh new taste - and considerably lower fat content - to an already healthy dish.

Ingredients:

  • 1 pound of beets, boiled and cut into cubes (or canned beets)
  • 1 1/2 cups of fat-free strained yogurt
  • 3 cloves of garlic
  • 1/2 cup of wine vinegar

Preparation:

Marinate the beets in the vinegar for 1 hour and drain. Grate the garlic into the yogurt and mix with the beets. Serve chilled.

Yield: serves 3

  • Protein: 6.4 gr
  • Fat: 0.5 gr
  • Carbohydrates: 29.2 gr
  • Cholesterol: 2 mg
