Beets and yogurt are a favorite combination, used even in some desserts; however this recipe, with fat-free yogurt, and beets marinated in vinegar, brings a fresh new taste - and considerably lower fat content - to an already healthy dish.
Ingredients:
- 1 pound of beets, boiled and cut into cubes (or canned beets)
- 1 1/2 cups of fat-free strained yogurt
- 3 cloves of garlic
- 1/2 cup of wine vinegar
Preparation:
Marinate the beets in the vinegar for 1 hour and drain. Grate the garlic into the yogurt and mix with the beets. Serve chilled.
