Low Fat Roasted Potatoes

Roasted potatoes are a favorite Greek side dish, and there's no reason why they can't be included in a low-fat diet. This recipe calls for coating thin slices of potatoes with a little oil and lemon juice.

Prep Time: 10 minutes

Cook Time: 45 minutes

Ingredients:

  • 1 pound of potatoes
  • 3 tablespoons of olive oil
  • 3 teaspoons of lemon juice
  • sea salt
  • freshly ground pepper

Preparation:

Preheat oven to 450F (230C).

Clean and peel the potatoes, and cut into long slices, about 1/3 of an inch thick. Dry them well on absorbent paper towels. Coat them with the oil and lemon juice, sprinkle with salt and pepper to taste, and place in a roasting pan in a single layer. Roast for 40-45 minutes, turning to brown on both sides.
