You can expect to roast a 25 - 30 lb. lamb anywhere from 4 to 5 hours. The lamb can be removed from the coals when a meat thermometer inserted into the leg/shoulder registers 170 degrees F (63 C).

Allow the meat to rest for at least 15 minutes before carving.
