In Greek: μαρμελάδα νεκταρίνια, pronounced mar-meh-LAH-thah nek-tah-REEN-yah
A fabulous preserve to make with ripe summer nectarines, this is a simple and easy recipe.

Ingredients:
- 2 pounds of large ripe nectarines
- 2 pounds of granulated sugar
- 1/5 cup of water
- 1/8 teaspoon of vanilla extract
- 1/4 cup of brandy
- 1 1/2 tablespoons of lemon juice
Preparation:
Peel and seed nectarines, and cut into large chunks. Add to a large pot with sugar and water and boil for 30-40 minutes, until the fruit is nice and soft. Keep a close watch toward the end, and 5 minutes before removing from the heat, stir in vanilla, lemon juice, and cognac and mix well.
Place in sterilized jars and allow to cool completely before sealing.
