A fabulous preserve to make with ripe summer nectarines, this is a simple and easy recipe.

Cook Time: 40 minutes

Total Time: 40 minutes


  • 2 pounds of large ripe nectarines
  • 2 pounds of granulated sugar
  • 1/5 cup of water
  • 1/8 teaspoon of vanilla extract
  • 1/4 cup of brandy
  • 1 1/2 tablespoons of lemon juice


Peel and seed nectarines, and cut into large chunks. Add to a large pot with sugar and water and boil for 30-40 minutes, until the fruit is nice and soft. Keep a close watch toward the end, and 5 minutes before removing from the heat, stir in vanilla, lemon juice, and cognac and mix well.

Place in sterilized jars and allow to cool completely before sealing.

A few adjustments made this perfect!, Member catfankim

I doubled everything except the sugar and did not use any water, as my nectarines were very juicy. The preserves were plenty sweet prepared this way. Absolutely delicious!
