In Greek: μαρμελάδα φράουλα, pronounced mar-meh-LAH-thah FRA-oo-lah
A classic example of the simplicity of Greek recipes that produce fabulous results! This recipe for strawberry preserves is very easy to make, and has few ingredients.
Ingredients:
- 2 pounds (about 2 1/2 pints) of fresh strawberries, washed, stems removed, cut in chunks
- 2 pounds of sugar
- 5 1/2 teaspoons of lemon juice
- 5 1/2 teaspoons of brandy
Preparation:
Combine sugar and strawberries in a pot and let sit for 30 minutes. Slowly bring to a boil, stirring constantly with a wooden spoon to prevent sticking and cook at a boil for 15-20 minutes, until syrup thickens. Stir in lemon juice and brandy, turn off heat, and allow the preserves to sit for 3-4 hours to meld.
If the proper consistency has not been reached, bring to a boil again (stirring continuously to prevent sticking), and cool again.
When completely cooled, transfer jars and seal.
Yield: four 4-ounce jars
