Sometimes, I think Greek butchers are the best cooks of all. When I go to the local butcher shop, I tell the butcher the dish I want to make and for how many, and he cuts the meat to order. These pictures are typical of butcher shops in small towns. Many larger cities have entire shopping areas filled with competing butcher shops, jammed next to each other, each shopkeeper hawking his wares and displaying the best of his stock on hooks, and sometimes in cases.
