Young, tender grape leaves have a wonderful musty flavor that lends itself perfectly to stuffing mixtures of rice, and rice and meat, to create dolmathes (larger) and dolmathakia (smaller) stuffed grape leaves, a favorite with Greeks and non-Greeks alike. Grape leaves used for cooking can come from almost any variety of grape, even wild grape vines, as long as they have not been sprayed.
