A Trip to the Fish Market

Shopping for seafood and shellfish is a real experience. The vendors are lined up on both sides of a "fish market" and each offers a speciality from his "own fishing boat." What I'm looking for are fish with clear eyes (the whitened eyes mean they're not wonderfully fresh). Like butchers, fishmongers are pretty helpful when it comes to what kind of fish to buy for a particular dish - if you don't have something special in mind.
