Cut Into Strips

Using a fluted pastry wheel, cut the dough lengthwise into 1-inch strips. (Each long piece of rolled dough should make 5 strips.) Each long, thin strip will make one spiral.

If using your hands to touch the dough while cutting, brush with flour to keep them dry.
