Recipes for Melomakarona Cookies

There are two traditional shapes for Melomakarona (also called Phoenika), a honey-dipped spice cookie that is a favorite all times of year and a customary Christmas cookie: one is round and easy to make by forming a ball with small pieces of dough (enough to fist in your fist) and then flattening it slightly. The other is the most frequently seen in Greek homes and bakeries: a rounded oval. Follow the photos, left to right, to create this shape.

Step 1: Take enough dough to fit in your fist and squeeze 5 times to compress.

Step 2: Form the dough into a log shape.

Step 3: Using the fingers of one hand, press gently into the dough to create the slightly flattened oval.

Once the cookie is formed, place with the finger-marked side down and cook as per recipe instructions.
