Once you make the biscotti dough and pat it out into small flat loaves (approx. 14 inches long, 1/2 to 3/4 inch high, and 3 inches across), it needs to be cut.

Using a floured knife, cut almost all the way through in approximately 1/2 inch slices.

After the first 15 minutes of baking, cut the slices all the way through.
