Preparing to make Greek pita wraps

Set the pita bread on a napkin, wax paper, or butcher's paper.

To soften the pita: Brush the pita rounds with olive oil on both sides and fry over medium-low heat or grill until they become soft and slightly browned. Even the thinnest pita bread can break during the wrap process if it hasn't been softened.

After the pita has been softened, place it on a napkin or paper.

Tip: Use flat pita bread and not pocket bread, which is too thick for making good wraps. The pita used in these photos is as thick as you want to go. Look for the thinnest in the market. The pita should be a container for the delicious ingredients, not the main event.
