Savory Greek pites (phyllo pies) are party favorites, whether on the coffee or buffet table. This step by step will show you how to use your favorite recipe on the site to make two (2) 9-inch springform pan pies for easy eating and an attractive presentation.

First, choose your recipe. These large pies can be divided in half to make two 9-inch pies, or make half the quantity for one pie.

The pie in the step by step photos is a simple greens pie with herbs.

Next, gather ingredients, pans, and utensils.

  • Phyllo dough: If making two 9-inch pies, use one (1) pound of phyllo sheets. Cut larger sheets in half (scissors work well) across the shorter side (or fold sheets in half) or buy a one-pound package that comes with two packets inside (pre-cut, 1/2-pound each). If making one pie, wrap unused phyllo in airtight plastic wrap and return to the freezer or fridge for later use. Defrost as per recipe or package directions.

  • One or two 9-inch springform pans
  • Pastry brush for oil or butter, as called for in the recipe
