Anthotyro
Anthotyro is a white cheese with a creamy, delicately sweet flavor. In soft form, it is most often used in desserts or as a sweet table cheese, and in hard form it a favorite grated over pastas and vegetable dishes.
Feta
Feta is the most well-known of all Greek cheeses. This white, crumbly cheese ranges from soft to hard, mild to sharp. In 2005, a long battle was resolved with a European Union ruling that use of the name "feta" for this cheese is exclusive to Greece.
Graviera from Crete
Cretan graviera is one of the most popular cheeses in Greece. It is a great table cheese (as a meze or to accompany a meal), and good for cooking and grating. It is similar to Gruyere.
Katiki
Katiki is a low-fat soft cheese, ideal for use as a spread, but also used in cooking.
Kefalograviera
One of the newer cheeses in the Greek lineup, kefalograviera is considered one of the finest table cheeses.
Kopanisti
Got bread? Get Kopanisti! This peppery white cheese made only in the Cyclades Islands spreads easily and makes a great meze (hors d'oeuvre). It is a particular favorite with Ouzo.
Lathotyri
A great table, grating, and cooking cheese, lathotyri Mytilinis takes its name from the island of Mytilini, where it is made.
Manouri
This soft white cheese is most often used to create desserts, from filled pies to a slice topped with roasted walnuts and drizzled with honey and served with fruit.
Metsovone
Metsovone (or Kapnisto Metsovone) is a smoked cheese made from cow's milk or a combination of cow's and goat's milk. It is considered an excellent hors d'oeuvre and snack, but can also be used for cooking.
Myzithra
Myzithra is a variation of manouri cheese, with less fat content. It comes in two varieties, fresh - soft and salt-free, used in baking - and aged - hard and salty, and the perfect grating cheese.
Touloumotyri - Greek Cheese
Touloumotyri is a moist white goat cheese. It is similar in texture to feta, but has a sweeter taste. Traditionally, it is ripened and stored in a bag made from the goat's hide.
