A tapsi is a traditional baking pan with sides around 1 1/2 inches high; however in common usage, it means any pan (generally metal) with 1 1/2 - 3 inch sides that is used in the oven, whether for baking, roasting, or broiling.
Widespread usage of the word "tapsi" is an example of the influence of a foreign culture on Greek cuisine. The word is Armenian in origin, and is used throughout Greece.
A tapsi can be round, square, oval, or rectangular in shape, and no Greek cook has just one.
Language note: A small tapsi is called a "tapsaki" (tahp-SAH-kee), and the plural is "tapsia," pronounced tahps-YAH.
