Definition: Asvesti is pickling lime, used as a soak when making traditional Greek spoon sweets, and some pickles. It helps firm and crisp fruits and vegetables that may otherwise soften with subsequent boiling.

It is sold with canning or pickling products at the super market and should never be substituted with lime purchased elsewhere that is not clearly marked "Food-Grade."

Follow recipe directions closely when using, and after the soak, be sure to rinse the food thoroughly in at least three changes of water to remove residue completely. Never soak in aluminum pots or bowls. Glass, plastic, ceramic, and stainless steel can be used.

Examples:
Dissolve one cup of pickling lime (asvesti) in five gallons of water.
