In Greek: αχλάδια με σάλτσα σοκολάτας, pronounced akh-LAH-thee-yah meh SAHLT-sah sok-oh-LAH-tas
Pears poached in a sugar syrup with a touch of lemon are served with a generous topping of chocolate sauce.
Cook Time: 35 minutes
Ingredients:
- 6 large, ripe, firm pears
- 1 cup of sugar
- 3 cups of water
- pinch of salt
- 4 tablespoons of lemon juice
- chocolate sauce (see below)
- mint leaves (garnish)
Preparation:
Make chocolate sauce and allow to cool.
In a saucepan, bring the water, sugar, salt, and lemon juice to a boil and cook for 5 minutes. Clean and peel the pears, leaving the stem intact. From the bottom, using a paring knife or corer, remove the core of the pear. Add to the syrup and boil 30 minutes, or until soft. Remove pears and place in a colander over a bowl in the refrigerator until chilled and well drained.
Place pears on a serving platter or individual plates, and spoon chocolate sauce over the top. Garnish with mint leaves and serve immediately.
Yield: serves 6
