There's nothing quite like the taste of fresh garden-grown tomatoes, and that taste can be part of your cooking year round. Fresh tomato pulp can be frozen and it's easy to do. Once thawed, the pulp can be used in all types of recipes calling for grated tomatoes or tomato pulp.

Here's How:
- Select ripe aromatic tomatoes.
- Remove stems, wash to remove any debris, and wipe dry.
- Cut tomatoes into chunks and puree in the blender.
- Pour measured amounts (i.e, 1 cup, 2 cups, etc.) into flat plastic containers, to a height of no more than 3/4 inch.
- Freeze uncovered.
- When the pulp has frozen, remove from the container, transfer to plastic freezer bags, seal, and label with the date and amount of pulp in each bag.
- Store in the freezer until ready to use.
- To use, defrost completely.
Tips:
- If needed, run cool water over the bottom of the plastic containers to help release the frozen pulp.
- Tomato products can be frozen for 12 to 18 months.
