Herbed Calamari Appetizer

Herbed Calamari (Squid) Appetizer

Once the calamari (squid) is cleaned, this is a simple and easy recipe. This dish is a classic krasomeze - a meze to serve with wine. The combination of herbs is a delight.

Cook Time: 40 minutes

Ingredients:

  • 1 1/2 - 2 pounds of whole squid (large or small, fresh or frozen)
  • 1 cup of white wine
  • 1 bay leaf
  • salt to taste
  • pepper to taste
  • 1 tablespoon of Greek oregano (rigani)
  • 2-3 tablespoons of olive oil
  • 1-2 tablespoons red wine vinegar (to taste)
  • 1/4 bunch of fresh parsley, chopped
  • 1/2 medium onion, chopped

    In a stew or soup pot, boil the squid with the wine and bay leaf for 35-40 minutes. If more liquid is needed, add a small amount of boiling water.

    Drain the squid and cut into rings. Sprinkle with salt, pepper, oregano, olive oil, vinegar, parsley, and onions.

    Serve warm or at room temperature.
