Greek Food - Strawberries with Yogurt Dessert

In Greek: φραούλες με γιαούρτι, pronounced frah-OO-less meh yee-ah-OOR-tee

A delicious layered dessert with 200 calories per serving, this combination of fat-free yogurt with a little full fat gives a full rich flavor. Greek meals can be made up of heavy dishes, or a lot of food, and this light dessert is a perfect ending.

Prep Time: 20 minutes

Ingredients:

  • 1/2 pound of fresh or frozen strawberries
  • 4 pieces of white bread rusks (friganies)
  • 1 teaspoon of lemon juice
  • 6 tablespoons of sugar
  • 1 drop of vanilla extract
  • 2 cups of fat-free strained yogurt
  • 3/4 cup of full-fat strained yogurt
  • 1/4 cup of whole milk (optional)

Preparation:

Break up rusks into small pieces.

Whisk fat-free yogurt until smooth and creamy. Slowly add full-fat yogurt, sugar, vanilla, and lemon juice and whisk until fully blended. Gently stir in strawberries with a soft spatula (rubber or silicone), leaving out a couple for garnish on each serving.

In a parfait glass, spoon in a layer of the yogurt mixture, sprinkle a layer of rusk pieces, and fill with the yogurt mix. Top with a strawberry or two.

Yield: serves 4

Serving suggestion: You can serve this in an old-fashioned glass as well (see photo).

Note: When using thick strained yogurts, add the milk a few drops at a time while whisking if needed to make the mixture creamier.
