Saltsa Fraoula: Strawberry Dessert Sauce

From Nancy Gaifyllia, for About.com

In Greek: σάλτσα φράουλα, pronounced SAHLT-sah FRA-oo-lah

A very easy recipe for a delightful syrupy sauce with chunks of strawberry. Spoon over cakes, ice cream, meringues, cream puffs, and even cheeses.

Ingredients:

  • 2 pounds (about 2 1/2 pints) of fresh strawberries, washed, stems removed, cut in chunks
  • 1 1/4 pounds of sugar
  • 5 1/2 teaspoons of lemon juice
  • 5 1/2 teaspoons of brandy

Preparation:

Combine sugar and strawberries in a pot and let sit for 30 minutes. Slowly bring to a boil, stirring constantly with a wooden spoon to prevent sticking and cook at a boil for 15-20 minutes, until syrup thickens.

Stir in lemon juice and brandy, turn off heat, and allow the sauce to sit for 3-4 hours to meld.

If the proper consistency has not been reached, bring to a boil again (stirring continuously to prevent sticking), and cool again.
