Feta and tomato meze - in 2 minutes

I first had this in a lovely taverna in Kalohori, outside of Thessaloniki in northern Greece. It's a variation of an old standard cooked in the oven, but this is quick, easy, and tastes delicious. Try it as a hot appetizer, or as a side dish with egg or vegetable dishes. Time will depend on your microwave power. I make it in a 900 watt microwave, high setting.

Prep Time: 5 minutes

Cook Time: 2 minutes

Ingredients:

  • 3 slices of tomato
  • 1 slice of feta from a block, 1/2-inch thick
  • 1 tablespoon of olive oil
  • 1 pinch of dried Greek oregano (rigani)

Preparation:

In a shallow bowl or on a plate, place the tomato slices in one layer. Place cheese on top and drizzle with the olive oil. Sprinkle oregano on top. Microwave on high for 2 minutes, or until feta begins to spread.

Serve hot as an appetizer or as a side dish.

Yield: serves 2
