Walnut Cake with Semolina

Different than the classic Greek walnut spice cake, this walnut cake mixes semolina and flour, and is made more like Western-style cakes. But, of course, it retains it classic Greek nature with a soaking of a lightly spiced syrup.

Total Time: 35 minutes

Ingredients:

  • 1 1/2 cups of sugar
  • 5 eggs
  • 3/4 cup of vegetable margarine, melted
  • 2 cups of semolina (or farina or cream of wheat)
  • 1 1/2 cups of flour
  • 2 teaspoons of baking powder
  • 1/2 pound of crushed walnuts
  • .
  • FOR THE SYRUP
  • 2 cups of sugar
  • 4 cups of water
  • large piece of orange peel
  • 1 cinnamon stick

Preparation:

Before starting, whisk together the flour and baking powder.

In a large mixing bowl, beat together the sugar and eggs until well combined. Slowly add melted margarine, semolina, flour with baking powder, and walnuts. Mix well.

Preheat oven to 355°F (180°C).

Transfer cake batter to a greased cake pan (or glass baker) and bake at 355°F (180°C) for 35 to 40 minutes.

Remove cake from the oven and make the syrup:

In a saucepan, dissolve sugar in the water. Bring to a boil and add orange peel and cinnamon stick. Allow to boil for 15 minutes, and remove from heat. Discard orange peel and cinnamon stick.

Pour hot syrup over the slightly cooled cake and let sit for a few hours until cooled and the syrup has been absorbed.
