Proheira Tyropitakia: Quick Last-Minute Fried Cheese Appetizers

In Greek: πρόχειρα τυροπιτάκια, pronounced PRO-hee-rah tee-ro-pee-TAHK-yah

Imagine a Greek version of French toast and that will give you an idea of how these are made - with some important modifications. The bread is cut into small pieces, the cheese is Greek (or substitute) and they're fried in olive oil. These are easy, quick, and a great hot addition to a party platter. Serve with ouzo, wine, as a snack, or even as a breakfast dish.

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • sliced white day-old bread
  • 5 eggs
  • 1 1/2 cups grated kefalotyri, pecorino, regato, or other hard, salty cheese of your choice
  • olive oil for frying
  • fresh flat-leaf parsley, chopped (garnish)

Preparation:

Remove crust from bread, and with a cookie cutter or knife, cut into small shapes.

Preheat a medium-sized frying pan over low heat.

In a bowl, whisk the eggs and mix in the cheese with a wooden spoon. The mixture should be thick, so add more cheese if necessary.

Add 2 tablespoons of olive oil to the frying pan and turn up the heat to medium. Dip the bread into the cheese and egg mixture and fry until golden brown on both sides. During frying, add more oil as needed.

Drain on paper towels and serve hot, garnished with a sprinkling of chopped parsley.
