Starry Starry Cheesecake
This fabulous, creamy cheesecake is made with myzithra cheese. Like many Greek cheeses, myzithra comes in two varieties: fresh and mild, and aged and sharp. This recipe calls for the unsalted fresh soft version. If you can't find this wonderful cheese, try the recipe with another slightly moist, unsalted mild white cheese, like mascarpone (or ricotta).
Decorate it! You can add this simple decoration to this cheesecake or any of the fabulous Greek coffee-cake style cakes to dress them up for the holiday table. Cut out stars (or use a cookie cutter with paper over the opening) and place them around the top of the cake when completely cooled. Sift a little confectioner's sugar over the cake to add a light coating. Remove the stars, and you have a festive dessert!
