Hot Pepper Cheese Dip: "Simple, But Brilliant"
In a five-star review, yasquared calls this recipe for Tyrokafteri (τυροκαυτερή, say: tee-roh-kahf-teh-REE) "simple, but brilliant," living up to the dip she knows from Greece.
The name of this cheese dip translates to "burning cheese" and, depending on how hot you can stand it, it's a perfect name! My family likes it very hot, so I use a type of local pepper that looks like a nice mild banana pepper but can make my eyes water just touching it, even when green.
Make it as hot or mild as you like. It's simple and quick with three ingredients (feta, peppers, olive oil) and adds a wonderful spicy note to a grouping of appetizers or mezethes, or as condiment with the main meal.
