Greek Christmas Bread: Christopsomo

From Nancy Gaifyllia, About.com GuideDecember 17, 2007

Greek Christmas BreadIn earlier times, Greek cooks baked large quantities of bread to last a week or more, so baking just one or two loaves for special occasions, like this Christmas Bread, had special significance. The cook would start by crossing him/herself before starting preparations, and only the purest and most expensive ingredients would be used.

Today, making Christopsomo (which translates as "Christ's Bread") is still considered by many to be a sacred task, and great care is taken in its preparation. Raisins, nuts, cinnamon, cloves, and nutmeg are just a few of the taste treats found in this traditional sweet loaf.

Christopsomo (Χριστόψωμο, say: hree-STOHP-soh-moh) can be made as large plain loaves, but loaves are often decorated with small pieces of dough, as shown in the photo at right. Creating this particular decoration is not difficult. Take a look at the large photo detail and follow recipe directions for a decorated loaf.
