Classic Greek Moussaka

Saturday November 11, 2006
Classic Greek MoussakaPronounced moos-sah-KAH, this is the most well-known of all Greek dishes and one of the most frequently mispronounced. But however you pronounce it, it's a culinary event - in taste and in preparation, and comfort food at its best.

There are several variations, but here, step-by-step, is the classic recipe using layers of eggplant, a meat and tomato sauce (with a touch of cinnamon), and an astonishingly thick and delicious béchamel topping. Moussaka takes time and kitchen counter space to prepare, but if you plan to fix it for a crowd or a special occasion, it's worth every minute - in taste and in compliments to the chef!

Meatless? Try Vegetarian Moussaka made with layers of eggplant, zucchini, and potatoes cooked with tomatoes and topped with grated cheese.
