The Vegetables of Summer: Green Beans and Tomatoes

This dish of fresh beans (any "string" type) and tomatoes is one of the most popular in Greek homes, especially in summer when beans are at their best and tomatoes at their ripest.

The Greek (or Mediterranean) diet relies much more heavily than Western diets on vegetable dishes made with olive oil (lathera), and this delicioius combination of simple ingredients is a classic example. Although Green Beans with Tomatoes might fit into your meals as a side dish, I highly recommend it as a main course, served with a a slice of feta cheese, and crusty bread.
