Roasted Pork Chops with PotatoesHere in my little village, I live on a hillside covered with vineyards and olive groves. My neighbors recently decided to clear a strip of their land that runs along the fence next to my house, and prepare it to plant lemon trees in the fall. They brought in a tractor to clear out the trees and foliage that were there, and then came the tiller. A great big hulk of a machine. And then came the wind. And all that dry dirt raised by the tiller coated my yard and house in red dust. The tiller is gone, but the wind is still blowing and the dust is still swirling.

A long story to explain why you're seeing a recipe for Roasted Pork Chops and not (dust-coated) grilled pork chops.

But this recipe is no second-place runner up. It takes first place with my family, even when I'd rather be cooking outdoors. The pork chops are cooked with potatoes, chopped tomatoes, bell pepper, and garlic, and roasted to perfection. It's an easy recipe to make, and takes a couple of hours to cook - leaving plenty of time to go out and wash down the patio to get rid of the red dust.

Make it a meal with a great summer salad like Maroulosalata (crisp Romaine lettuce with spring onions and fresh dill) or a traditional Horiatiki Greek Salad.

So, what’s a little red dirt between friends? And I bet Greek dirt is really yummy. No?
Just wanted to let you know that I tried your yoghurt recipe. It’s wonderful! I’d not ever tried leaving the skin on the milk before, and that made all the difference in the final product.

I’ll bet the dirt where YOU are tastes good! I’m glad the yogurt turned out well… leaving the skin on almost goes against human nature (grin) but the result is worth it!
