Zucchini: Croquettes & Other Recipes

"In season" is one of the basics of traditional Greek cooking and here in my little village, the market is overflowing with zucchini. It's peak season for this favorite summer squash (in Greek, kolokythakia, say: koh-loh-kee-THAH-kee-yah), and although zucchini may be available in your local market year round, it never tastes better than in late spring/early summer.

This recipe for Zucchini Croquettes (photo) is a delicious combination of zucchini, dill, mint, and cheese, and can be served as an appetizer, side dish, or entree.

The recipe is a lot easier to fix than it is to say. The Greek name is κολοκυθοκεφτέδες (kolokythokeftethes, say: koh-loh-kee-thoh-kef-TEH-thes).
