A Greek Pita for Mother's Day Brunch

Surprise Mom on Mother's Day with a Greek pita on the brunch buffet, like this delicious and easy Feta Cheese Pita, pictured at right. Not quite a cheese pie, not quite a quiche, it's made with eggs, yogurt, and feta cheese. Other favorite pita choices for a brunch menu:
  • Spanakotyropita - one of the easiest recipes for spinach and feta cheese pie
  • Spanakopita - spinach pie without cheese
  • Tyropita - a quick way to make the classic feta cheese pie

Strange (but loving) taste combinations: Greek breakfasts are an unusual affair, so I'll be entertained on Mother's Day at brunch with dishes that are family specialties: My granddaughter is an expert with strapatsatha - scrambled eggs with tomato and feta cheese, and my son makes fabulous chocolate crepes. When everyone fixes their favorites, it may not make for the world's greatest culinary combination, but the sentiment of the day pulls it all together for a wonderful meal!
