Yemista: Baked Stuffed Vegetables

Stuffed tomatoes, zucchini, eggplants, and green peppers are prepared all over Greece with slight regional differences. They can be baked in the oven or cooked on the stove top, and they are a restaurant standard and a favorite in Greek homes. This baked version is from Crete and calls for a meat and rice stuffing for one or more types of vegetables.Photo © J. Stanfield
