Tyropita on the Run

Friday December 9, 2005
Tyropita (cheese pie) is a favorite snack in Greece. Pieces are sold at coffee shops, fast food stands, and corner bakeries, and every Greek cook has a special recipe. This one uses feta cheese and puff pastry dough, takes only 15 minutes to prepare and 30 minutes to bake. One of the great Greek delights in record time! Serve it as a snack or side dish.

Looking for a smaller version to serve as an appetizer? Try Tyropitakia (little cheese pies).

Debra F. Weber, of French Cuisine fame, serves up today's cookie - a particular favorite of mine. These Galettes aux Fruits, lemony butter cookies filled with raspberry jam, are irresistible.
